Water choice: Zephyrhills Additional ingredients and spices: Rice hulls -- stir in at end of boil. Optional. Pumpkins: Hack in half, bake on pan (no oil!) @ 350F for 90 minutes. Line pan with foil. Scoop pulp and add to mash. Listed mash contribution in Strangebrew suspect, allow for 1.054 OG or so. End of boil: Add 1/2 teaspoon pumpkin pie spice, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg This beer uses a CEREAL MASH (double mash). Take wheat, oatmeal, and six-row malt. Stew at 122F for 15 minutes. Raise to 150F, hold for 15 minutes. Raise to boiling, hold for 15 minutes. Use 1.875 gallons water. Regular mash should be struck with 1.5625 gallons of 133F temperature water. This should end up as 122F. Add the cereal mash in. Final mash is 155F. Rest for 45 minutes. Sparge with 3.1 gallons @ 170F. |
