Water choice: Zephyrhills Primary: 69F (warm) Additional ingredients and spices: Rice hulls -- stir in at end of boil. .25 ounces coriander. Add 5 minutes before end of boil. At bottling time, add REGAN'S ORANGE BITTERS to taste. We've been using 32 splashes for 4 gallons (8 splashes per gallon) This beer uses a CEREAL MASH (double mash). Take wheat, oatmeal, and six-row malt. Stew at 122F for 15 minutes. Raise to 150F, hold for 15 minutes. Raise to boiling, hold for 15 minutes. Use 1.875 gallons water. Regular mash should be struck with 1.5625 gallons of 133F temperature water. This should end up as 122F. Add the cereal mash in. Final mash is 155F. Rest for 45 minutes. Sparge with 3.1 gallons @ 170F. |
