Water choice: Zephyrhills Ferment at 66F. New mini-decoction method: Infuse grain @ 140F, rest 20 minutes Take out 40% of the grain (thick mash), bring grain to a boil Boil the grain no longer than 30 minutes, or as long as it takes before the grain gets sticky / potentially scorchable. Return grain to tun -- should be 156-158F. Rest another 20-30 minutes Draw out about 1 gallon of wort -- bring to boil Add back to tun -- should bring mash temperature to 170F. Recirculate, then sparge. NOTE: See mash manager for strike and sparge |
