Distilled water / 1 gallon regular water blend. Double decoction process used: 125 @ 15min, 40% grain rested at 150F for 15 min before boiled for 30 min. Rest for 30 minutes. Returned to mash (approx 154F), remove 40% grain and boil for 20 minutes for mash-out @ 170F, normal sparge. The mash manager schedule is strike and sparge only. Water choice: Deer Park Yeast should be White Labs: Czec Budejovice (WLP802) when available NOTE: Fornicator mash schedule has correct one :) 3.4 gallons initial mash, 3.1 gallon sparge, 135 strike New mini-decoction method: Infuse grain @ 140F, rest 20 minutes Take out 40% of the grain (thick mash), bring grain to a boil Boil the grain no longer than 30 minutes, or as long as it takes before the grain gets sticky / potentially scorchable. Return grain to tun -- should be 156-158F. Rest another 20-30 minutes Draw out about 1 gallon of wort -- bring to boil Add back to tun -- should bring mash temperature to 170F. Recirculate, then sparge. |
